Kilchoman Feis Ile 2021, 0,7 L

Charakteristik:
Aroma: Ein sanfter, leicht erdiger Torfrauch mit einer ebenso sanften Kante von Lakritz und etwas Malzzuckersüße sind verwoben mit etwas Vanille, einem Hauch von Zitrone- und Orangencitrus, etwas Eichenwürze und etwas Sultaninenfruchtigkeit, die sich im Schatten verbirgt.


Geschmack: Köstliches erdiges Torf, einigen etwas kräftigeren Zuckernoten aufgepackt, führt die Atacke und füllt jedem Winkel des Mundes, dazu gesellt sich einiges an zestigem Zitronen-Citrus, Vanille, Butterscotch, Eichenwürze und eine Sultaninenfruchtigkeit.


Im Nachklang köstlich lang, der sherry ist jetzt prominenter und Zucker und Torf haften eine Ewigkeit einfach nur am Gaumen, bevor sie verblassen, um einige anhaltende Eichenwürze und Lakritze zu hinterlassen.


Ausbau: 55% bourbon 45% sherry

two ex Miguel Martin Oloroso fresh sherry butts cask numbers 94/11 & 151/11

six ex Buffalo Trace fresh bourbon barrels cask numbers 27/12, 711/12, 712/12, 713/12, 714/12 & 718/12

Besonderheit: Faßstärke, non chill-filtered, natural colour, limited release 2832 Flaschen.

Abgefüllt am 19.04.2021 laut label, 15.04.2021 laut bottling code. Da butts 500 ltr. oder mehr fassen reichen zwei für einen Anteil von 45% im vatting gegenüber sechs 200 ltr. bourbon barrels. Matured for a minimum of 8 years.

"Anthony has selected eight 100% Islay casks for this years release, two 2011 oloroso sherry butts and six 2012 bourbon barrels. The casks were filled with 20ppm 100% Islay spirit, distilled from Optic and Publican barley varieties, harvested at Kilchoman in 2010 and 2011. This Single Farm single malt was matured in our onsite dunnage warehouses before being bottled at cask strength; 56.3% abv."


As you might know, I am partial to marrying bourbon and sherry casks, I feel these two cask types allow me to increase complexity without losing depth of character. The bourbon barrels Ive selected give a solid structure to the dram that allow for a balance of maritime Islay flavours and the natural citrus sweetness of our spirit to shine through. The two oloroso sherry butts I chose add depth and richness to the whisky, Ive had an eye on these casks for a while and theyve now reached their peak
