Geschmack: Pflaumen, Zimt und gekochte Äpfel und Birnen mit einem Hauch von frischem Rauch.

Im Nachklang Wellen von leicht gewürztem Torfrauch, anhaltender Süße und reichen Sherry-Noten.


Ausbau: 39 ex-bourbon barrels, 2 ex-Oloroso sherry butts

       
Besonderheit: non chill-filtered, natural colour limited edition 12400 Flaschen.


Gerste aus den Ernten von 2007, 2009 und 2010, gemälzt zu einem Phenolgehalt von 20 ppm im Malz aus den Gerstensorten Optic und Publican. Mindestens neun Jahre gereift in 39 ex-bourbon barrels and 2 ex-Oloroso sherry butts.


Auch schon die zehnte Edition.

Anthony Wills: Our 100% Islay whiskies are special, they both reflect the traditions of Scotch whisky production and examine the increasing interest in the detail of how single malt is made. With our 100% Islay range we control every element of the whisky-making process ourselves, from barley variety through to individual casks selected for bottling. It means we are able to adapt our methods and inputs to maximise the character of the whisky in the glass. The Optic and Publican barley varieties used for the 10th Edition, paired with a light peat smoking, long fermentation and high spirit cut creates a bright, floral nose of citrus sweetness that gives way to prunes, cinnamon and cooked apples & pears on the palate. The finish brings waves of mildly spiced peat smoke, lasting sweetness and rich sherry notes.


Kilchoman distillery, 2005 gegründet hat sich zum Ziel gesetzt, so viel wie möglich mit lokal auf Islay produzierten Zutaten zu machen. Als echte farm distillery baut sie einen Teil ihrer Gerste selbst an und mälzt diese auch selbst. Kilchoman ist natürlich eine der kleinsten Brennereien in Schottland, sie macht nur 90-100000 Liter Alkohol im Jahr. Zumindest bis zur 2019 abgeschlossenen Erweiterung die die Kapazität verdoppelt hat.

Dieser reift in bourbon barrels von Buffalo Trace Distillery, Kentucky, USA und fresh oloroso sherry butts direkt aus Spanien.


"Released annually since 2011, our 100% Islay range is distilled from barley grown in the fields surrounding the distillery before the team malt, distil, mature and eventually bottle onsite; an unmatched, unbroken chain of creation from barley to bottle. Our 100% Islay range remains Scotlands only Single Farm Single Malt.

Distilled from our 2007 and 2009 barley crops, the 9th edition is a vatting of 43 ex-bourbon barrels matured for over 9 years in our on-site dunnage warehouses. Bottled at 50% abv, weve released a total of 12,000 bottles.

 Our 100% Islay spirit pairs seamlessly with ex-bourbon barrels. The lower peating level (20ppm) allows the natural floral sweetness of the spirit to shine through whilst a higher age profile adds layers of overripe tropical fruit and stewed plums whilst the high ABV makes it no lightweight.
