Charakteristik:

bottlers note: Aroma: Trockenes Heu und gesägtes Holz, mit dunkler Schokolade und getrockneten Feigen sowie Pflaumen in süßem Sirup.

Geschmack: Wärmende Cerealien- und Toast Noten, mit einer Menge an frischen roten Früchten und butterscotch.

Im Nachklang Andeutungen von würziger Eiche, Unmengen getrockneter Früchte und einer anhaltenden nussig-trockenen Note.


Ausbau: Shaved, toasted and re-charred 225-litre American oak red wine barriques, made for us at the cooperage in Portugal in a process designed by the late Dr Jim Swan.

Beschreibung: non chill-filtered, wahrscheinlich natural colour, limited edition 2800 Flaschen im batch 2.


Das batch 1 hatte 1423 Flaschen und kam aus der gleichen Art von casks. Diese ausgehobelten, erst getoasteten und dann ausgebrannten ehemaligen Rotwein barriques wurden noch vom inzwischen verstorbenen technischen whisky Berater Dr. Jim Swan designed.


The Cotswold Distilling Company Limited, kurz The Cotswolds Distillery wurde 2013 gegründet und begann im September 2014 mir der Produktion von whisky und Gin. The first single malt whisky ever made in the Cotswolds kam 2017 heraus.

Angebaut auf Farmen der Gegend wird die Gerste auf den ältesten floor maltings in Großbritannien in Warminster, Wiltshire gemälzt. Gemahlen wird es in der Destillerie. mashing und fermentation dauern vier Tage, destilliert wird in copper pot stills von Forsyths. Gereift in ex-bourbon und reconditioned red wine casks.


Malt: Odyssey, grown on Cotswolds farms and floor-malted at Warminster Maltings.

Yeast: Two complementary varieties - Anchor and Fermentis - to ensure good yields and excellent fruity flavours.

Water: Village water supply - filtered, softened and demineralised before use.

Wood: Shaved, toasted and re-charred 225-litre American oak red wine barriques, made for us at the cooperage in Portugal in a process designed by the late Dr Jim Swan.


"The Founders Choice release begins with our new make spirit creamy and incredibly fruity, thanks to the pair of yeasts, 90-hour fermentation and tight heart cut on the spirit still. We dilute to 63.5% ABV for casking, and then fill the American oak STR barriques.

These brilliant casks are designed to get the absolute best from the wood and provide the perfect conditions for maturing whisky. Dr Swans process opens up the wood, allowing for plenty of flavour and colour to be extracted. It also builds the perfect flavours in the oak just enough influence from the original red wine, without overpowering the new make spirit, plenty of coconut and vanilla from the American oak, and deep toffee and caramel notes from the slow toasting and intense charring steps. Its an extremely active maturation and gives a balance, depth of flavour and rich colour normally associated with much older whiskies.

The casks matured for just over three years before Dan selected the nine that would go into this first batch. The casks were then disgorged and bottled at natural cask strength, non-chill filtered and with no added colouring."
